From Tree to Table: The Maple Syrup Industry Pamela Moy, Teacher Advisor

The ability of the maple tree to produce sap is a marvel of biology. This ability is also a major source for the Canadian economy. The process of photosynthesis allows the tree to make food which can be stored for the winter. In late winter to early spring, the tapping of the maple trees begins. This sweet fluid can then be boiled down to make one of Canada's most loved exports, maple syrup.
